2 quarts vegetable oil for frying

3/4 cup milk

1 large egg

1/4 tsp. vanilla extract

2 teaspoons vegetable oil

1.5 cups pancake mix

1 pack (18 cookies) of cream-filled Oreo cookies. Double-stuffed Oreos are the best, but you're welcome to experiment.

Directions;

  • Heat the oil in a deep fryer or large pot to 375°F.
  • In a large mixing bowl, combine the milk, egg, vanilla essence, and two teaspoons of vegetable oil. Whisk them to make them smooth. Add the pancake mix and whisk until there are no longer any dry lumps.
  • Dip cookies in the dough before placing them delicately in the hot oil. Do this one at a time to get a uniform coating. If you keep them there too long, they'll get wet. 
  • Carefully place them in the oil, and then fry them for three minutes, or until golden brown. To ensure even heating, do this in batches (4-5 cookies at a time). Before serving, let them rest on a dish covered with paper towels.
